Sounds okay to me. Have seen players of all rating classes do this. As the King is placed on the proper square in King-side castling, the ring finger and little finger scoop up the Rook at the same time. Then the rook is placed comfortably alongside his majesty. A variation is to pick up the King first and do the Rook scoop before placing the King down on its castling square. The motion is at least as fast as two handed castling. Since the King is touched first, there should be no problem.
As long as the king is touched first and the move is completed with one hand, it does not matter that the king has not been placed on its destination square before the rook is touched under both FIDE and US Chess rules.
On the other hand (oops, maybe I should have just said “However”), I suppose there could be a problem if the player picks up his king, then scoops up the rook with his little fingers (all with the same hand), then lets the king go on f1 instead of g1 while still holding onto the rook.
