“The King’s Gambit,” by Victor Korchnoi and Vladimir Zak. An older book, but with analysis of every variation.
“Who’s Afraid of the King’s Gambit?”, by Eric Schiller. An inexpensive little book with ideas against major White lines.
“200 Open Games,” by David Bronstein. It’s a book by Bronstein. Enough said.
“Chess from Morphy to Botvinnik,” by Imre Konig. A nice book that compares different eras in a variety of openings. A bit dated, but having a collection of some of the old games played in the Romantic style is worth it.
There is also an interesting section on the Muzio Gambit in Larry Christiansen’s, “Rocking the Ramparts.” This is an extremely fine book on attacking chess. Especially see page 22 for “rules” on how much you can sacrifice.
You might also want to find a collection of Adolf Anderssen’s games from the 1800’s. In addition, the Oxford Encyclopedia of Chess Games has numerous King’s Gambits.

King’s Gambit by Trevor Hay was a good book I’d strongly suggest this even though its old.
Play the King’s Gambit (Two volumes, one accepted, one declined) by Estrin - I liked this.
King’s Gambit as White (early version Raingruber, Maser and GM Christiansen, revised version Raingruber and Maser only.
King’s Gambit by R.G. Thimann - many good game references.
The King’s Gambit - Neil McDonald.
The King’s Gambit by GM Shaw is expected September-ish.
